I grew up in several states, but I did most of my growing up in Michigan. Raised by a single mom, I ended up cooking as a kid and have spent most of my life cooking for a living. I worked my way up through kitchens the old-fashioned way, learning from chefs, long shifts, mistakes and successes, and probably a little from the school of hard knocks too.
Over the years, I worked everywhere from little French and Italian restaurants to larger restaurant groups, high-end kitchens and eventually The Ritz-Carlton. As part of the opening culinary team at The Ritz-Carlton, I had my first opportunity to cook for a U.S. president, George W. Bush. For much of my career I worked as a sous chef and saucier. My job was making sure things tasted amazing. Sauces, seasoning, balance and flavor. That was always the part of cooking I loved most.
Then I took on the role of chef at a little family place, and from there I started a catering company that grew into a large, respectable, award-winning business. One part of my company was Gourmet Airfare, our aviation catering division, and for nearly two decades my staff and I prepared high-end food for private aircraft. In 2005, NetJets recognized Gourmet Airfare with its national Service Excellence Award, an honor presented to one aviation caterer each year. During those years, we also prepared meals for four U.S. presidents and their press corps.
I also spent close to two decades working in film production catering, feeding cast and crew on movie and television sets around the country and in England. Yep, I even have an IMDb page, which lists quite a few of the productions I worked on, although not all of them.
Hard to believe when I look back on it, but over the course of my career I've prepared and served more than two million meals. Some were for presidents, celebrities, athletes, musicians, CEOs and people you'd probably recognize. Most were for private clients, wedding guests, corporate clients, film crews, families and everyday people. I enjoyed cooking for all of them, and I have a lot of stories to share, for sure.
No matter who is sitting at the table, everybody wants food that tastes like somebody cared enough to make it right.

The story behind 7 Herb
"It rounded out the flavor"
I created 7 Herb nearly 35 years ago because I wasn't happy with the all-purpose seasonings I was using. They were expensive and had hidden ingredients. They always seemed to be missing something. I wanted one seasoning that gave food plenty of flavor without burying the food underneath it. Something that, as my wife says, "rounded out the flavor." By that she means the food just tastes more complete. Nothing jumps out too much, nothing feels like it's missing, and all the flavors seem to come together the way they should.
When I started my catering company and introduced 7 Herb, it became part of the food we were known for. At wedding tastings, we would prepare dishes for the bride, groom and their families so they could choose their menu, and about 95% of them chose our 7 Herb chicken along with our carved beef, which we also seasoned with 7 Herb. Most of our corporate catering clients chose 7 Herb too because everyone loved it. And after the buffets? There usually wasn't any left. That tells you something. People love juicy dishes with a lot of flavor.

As the company grew, my chefs would sometimes try to tweak the 7 Herb recipe, so pretty quickly I pulled the mixology of my prized flavor profile out of my own kitchen and moved it to a manufacturer who blended it the same every time. That way I was able to keep its integrity the same throughout the life of my business. Now I make it in small batches. A chef calls and needs some, I make his batch and a little more for home. Family and friends are always asking to refill their spice jars. Even customers from my catering company purchased it.
One of my favorite stories is about a DJ who worked with our company. He loved 7 Herb on the potatoes and chicken and asked if he could buy some to take home. Not too long after that, he came back to my kitchen asking to purchase more. He had invited his grandmother over, and she was refusing to eat her vegetables and chicken without it. I have to chuckle at that one.
I know it is the most-used spice in my family and extended family's kitchens. My sister-in-law has a cabinet full of spices, but 7 Herb is the daily spice she uses. She and my brother-in-law cook together and it's both of their favorites.
For nearly 35 years, 7 Herb was something I made for my kitchens, my customers, other chefs, friends and family. Now I finally get to share it with you, and I'm pretty proud of that.

Season your food the way you normally would and cook the way you already cook. It's meant for real home cooking, the everyday kind, where you want dinner to taste great without making it complicated.
